Aj bratislavsk\u00e9 ro\u017eky maj\u00fa ten svoj a je skuto\u010dne delik\u00e1tny!<\/strong><\/p>\n<p>Bratislavsk\u00e9 ro\u017eky boli prv\u00fdkr\u00e1t v hist\u00f3rii spomenut\u00e9 u\u017e v roku 1599, kedy sa pod\u013ea\u00a0Knihy majstrov cechu pre\u0161porsk\u00fdch pek\u00e1rov na Ve\u013ekono\u010dn\u00fd pondelok rozhodlo, \u017ee bajgle (vtedaj\u0161\u00ed n\u00e1zov pre bratislavsk\u00e9 ro\u017eky) maj\u00fa piec\u0165 v\u0161etci pek\u00e1ri, ktor\u00ed pe\u010d\u00fa aj pracl\u00edky.<\/p>\n<h3>A pr\u00edbeh pokra\u010doval &#8230;<\/h3>\n<p>Pek\u00e1r Scheuermann si otvoril pek\u00e1re\u0148 s v\u00fdrobou bratislavsk\u00fdch ro\u017ekov v roku 1836.\u00a0O\u00a0p\u00e1r rokov t\u00fato \u0161pecialitu u\u017e vyr\u00e1balo nieko\u013eko pek\u00e1rov, ako napr. Lauda, Schwappach, Kor\u010de, ktor\u00fd \u00fadajne dod\u00e1val ro\u017eky aj na\u00a0cis\u00e1rsky dvor do\u00a0Viedne a\u00a0bol rytierom r\u00e1du Franti\u0161ka Jozefa. Schwappach a\u00a0Wendler zasielali balen\u00e9 ro\u017eky aj po\u0161tou, napr. do\u00a0Budape\u0161ti, Trnavy, Ostrihomu a\u00a0inde do monarchie.<\/p>\n<p>Nako\u013eko sa t\u00e1to pek\u00e1rska \u0161pecialita eur\u00f3pskeho v\u00fdznamu dost\u00e1vala do\u00a0zabudnutia, Cech pek\u00e1rov a\u00a0cukr\u00e1rov regi\u00f3nu z\u00e1padn\u00e9ho Slovenska sa podujal na\u00a0\u201eo\u017eivenie jej v\u00fdroby\u201c. Cesto mus\u00ed obsahova\u0165 30 % tuku z hmotnosti m\u00faky, t. j. na 6oo g m\u00faky asi 180 g masla. Origin\u00e1l ro\u017eky musia by\u0165 bez chemick\u00fdch pr\u00edpravkov a roben\u00e9 ru\u010dne a m\u00f4\u017eu by\u0165 len makov\u00e9 alebo orechov\u00e9, ale tie sa tvarom od seba l\u00ed\u0161ia. Makov\u00e9 s\u00fa v tvare podkovi\u010dky a orechov\u00e9 v tvare p\u00edsmena C.<\/li>\n<li>Ro\u017eok m\u00e1 obsahova\u0165 minim\u00e1lne 40 % plnky z hmotnosti cesta. Po vykysnut\u00ed cesta sa maj\u00fa vytvori\u0165 2 &#8222;\u0161\u00falky&#8220; nakr\u00e1ja\u0165 asi na 25 g k\u00fasky, z nich urobi\u0165 gule a necha\u0165 kysn\u00fa\u0165. Ide\u00e1lne je v\u00e1\u017ei\u0165 cesto, aby bola ve\u013ekos\u0165 rovnak\u00e1.<\/li>\n<li>K \u017e\u013atkom treba prilia\u0165 trocha mlieka,\u00a0vymie\u0161a\u0165, natrie\u0165 a da\u0165 do prievanu na pol hodiny, k\u00fdm obschn\u00fa.
